Bright, colorful, and deliciously chewy, these Easter Funfetti Cookies are a festive addition to any celebration.

Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup pastel sprinkles or candies

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, baking powder, baking soda, and salt in a bowl.
  3. Cream together the softened butter, granulated sugar, and brown sugar in a separate large bowl until light and fluffy.
  4. Beat in the eggs, one at a time, and stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fold in the pastel sprinkles or candies.
  7. Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Use pastel sprinkles made for baking to hold their color. Store cookies in an airtight container for up to 5 days.
