A heartwarming and flavorful black bean chili that combines vibrant spices, tender vegetables, and nourishing ingredients for a cozy meal.

Ingredients

  • 1 can black beans
  • 1 can diced tomatoes
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup corn (fresh or frozen)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat 1 tablespoon of olive oil in a large pot over medium heat.
  2. Add 1 diced onion and 2 minced cloves of garlic, sautéing until softened.
  3. Stir in 1 diced bell pepper and cook for another 3-4 minutes.
  4. Add 1 can of black beans, 1 can of diced tomatoes, and 1 cup of corn.
  5. Sprinkle in 1 tablespoon of chili powder and 1 teaspoon of cumin, then season with salt and pepper.
  6. Bring the mixture to a gentle simmer and allow to cook for about 20 minutes, stirring occasionally.
  7. Serve hot, garnished with fresh cilantro if desired.

Notes

For added spice, include diced jalapeños or a splash of hot sauce. Best enjoyed with cornbread or crumbled tortilla chips.
