8 ounces burrata cheese
1/4 cup olive oil
1 clove garlic, grated
1/2 teaspoon fresh thyme leaves
1/3 cup sliced, pitted Castelvetrano olives
2 tablespoons capers, drained
2 teaspoons lemon zest
2 tablespoons toasted pine nuts
Kosher salt
sliced French baguette for serving
Instructions
Gently pull the burrata apart and place it on a serving platter.
Add olive oil, garlic, and thyme to a saucepan. Cook over low heat for 10 minutes until the garlic gets fragrant. Don’t let the oil simmer or let the garlic brown!
Let the olive oil cool for about 5 minutes until it comes to room temperature.
Pour garlic olive oil over the burrata.
Sprinkle olives, capers, lemon zest, pine nuts, and a large pinch of salt in an even layer across the burrata.
Serve with sliced French bread and enjoy!
Notes
Use this recipe as a blueprint and make it your own! If you don’t fancy olives, leave them out and add more capers!
If you aren’t a big fan of lemon, omit it and try sun-dried tomatoes instead!
Burrata pairs beautifully with many different flavors, so customize as you wish!
