- 1 to 1.5 pounds sirloin or flank steak
- 4 cloves garlic, minced
- 4 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika or chimichurri spice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
- Pat steak dry with paper towels. Season both sides with salt, black pepper, and smoked paprika or chimichurri spice.
- Let the seasoned steak sit at room temperature for 15–20 minutes.
- Heat a cast iron skillet over high heat. Add olive oil and sear steak for 3–4 minutes per side until crust forms.
- Remove steak and let it rest. Reduce skillet heat and melt butter, then add minced garlic and cook for 1 minute.
- Stir in chopped parsley to create the garlic herb butter sauce.
- Slice rested steak against the grain and drizzle the warm garlic butter over the top.
- Serve immediately with your favorite sides.
