  • 1 to 1.5 pounds sirloin or flank steak
  • 4 cloves garlic, minced
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika or chimichurri spice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Pat steak dry with paper towels. Season both sides with salt, black pepper, and smoked paprika or chimichurri spice.
  2. Let the seasoned steak sit at room temperature for 15–20 minutes.
  3. Heat a cast iron skillet over high heat. Add olive oil and sear steak for 3–4 minutes per side until crust forms.
  4. Remove steak and let it rest. Reduce skillet heat and melt butter, then add minced garlic and cook for 1 minute.
  5. Stir in chopped parsley to create the garlic herb butter sauce.
  6. Slice rested steak against the grain and drizzle the warm garlic butter over the top.
  7. Serve immediately with your favorite sides.
