A delightful twist on classic tiramisu using gingerbread cookies for a festive taste.

Ingredients

  • 2 cups heavy cream
  • 3 egg yolks
  • 1 1/4 cups powdered sugar
  • 2 1/4 cups mascarpone cheese
  • 1/2 cup eggnog
  • 40 gingerbread cookies
  • 1/2 cup coffee
  • 1 tsp rum extract (non-alcoholic alternative)

Instructions

  1. In a bowl, whip heavy cream until soft peaks form.
  2. In another bowl, whisk egg yolks and powdered sugar until smooth.
  3. Add mascarpone and eggnog to the yolk mixture; mix until combined.
  4. Fold whipped cream into the mascarpone mixture gently.
  5. Dip gingerbread cookies in coffee quickly; layer half in a dish.
  6. Spread half of the cream mixture over cookies; repeat layers.
  7. Chill for at least 4 hours before serving.

Notes

  • Adjust the coffee amount based on your preference for moisture in the cookies.
  • For a stronger flavor, let the tiramisu chill overnight.
