  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the lemon cake mix, eggs, vegetable oil, and vanilla extract in a large mixing bowl. Mix until the batter is well combined.
  3. Scoop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper, leaving space between each ball.
  4. Bake for 9-11 minutes, or until the edges are golden.
  5. Cool the cookies slightly on the baking sheet and then dust with powdered sugar before serving.

Notes
