A bright and fruity raspberry filling perfect for cakes and desserts, easy to make with simple ingredients.

  • 1/2 cup sugar
  • 2 tablespoons cornstarch
  • 1/4 cup water
  • 1 teaspoon lemon juice

Instructions

  1. In a saucepan, combine raspberries, sugar, cornstarch, water, and lemon juice.
  2. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
  3. Reduce heat and simmer for 2-3 minutes.
  4. Remove from heat and let cool before using as a cake filling or topping.

Notes

For a seed-free version, press the cooked mixture through a sieve into a bowl, then cool.
