  • 3 cups shredded rotisserie chicken
  • 4 cups frozen shredded hash browns
  • 2 cups sharp cheddar cheese
  • 2 cups cornflakes
  • 1 can cream of chicken soup
  • 1 cup whole milk
  • 1 tsp onion powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix in a large bowl the shredded rotisserie chicken, hash browns, cream of chicken soup, milk, onion powder, salt, and pepper until well combined.
  3. Prepare a 9×13-inch casserole dish by greasing it with cooking spray or butter.
  4. Pour the mixture into the dish and spread it evenly.
  5. Layer the cheddar cheese on top, then add a layer of cornflakes for crunch.
  6. Bake for 30-35 minutes until golden brown and bubbly.
  7. Rest for a few minutes before serving to allow it to set.

Notes

Make-ahead option: Assemble the casserole a day in advance and bake it straight from the fridge, adding a few minutes to the baking time.
