A comforting chicken dinner with tender chicken breasts slow-cooked to absorb rich flavors from black beans, sweet corn, and zesty diced tomatoes.

Ingredients

  • 2 lbs Boneless, skinless chicken breasts
  • 1 can Black beans, rinsed and drained
  • 1 cup Corn, canned or frozen
  • 1 can Diced tomatoes
  • 1 can Green chiles
  • 1/2 cup Cream or sour cream
  • 1 tsp Cumin
  • 1 tsp Chili powder
  • Salt and pepper to taste
  • Toppings: Avocado, tortilla strips, shredded cheese

Instructions

  1. Prepare the chicken: Place the chicken breasts in the bottom of the slow cooker.
  2. Add the black beans, corn, diced tomatoes, green chiles, and cream into the slow cooker. Scatter spices over the top.
  3. Season to taste with salt and pepper.
  4. Mix everything together until well combined.
  5. Set your slow cooker to low for 6-8 hours or high for 3-4 hours.
  6. Shred the chicken directly in the slow cooker with two forks after cooking.
  7. Serve hot with toppings of avocado, crunchy tortilla strips, and shredded cheese.

Notes

For meal prep, store precooked components in the fridge. Use an Instant Pot for quicker preparation if needed.
