  • 1 1/4 cups (150g) all-purpose flour
  • 1/4 cup (30g) powdered sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup (113g) cold unsalted butter, cubed
  • 1 large egg yolk
  • 12 tablespoons cold water
  • 8 ounces (225g) high-quality white chocolate, chopped
  • 1 cup (240ml) heavy cream, chilled
  • 1/4 cup (60ml) milk (whole or 2%)
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon unflavored gelatin (optional, for extra stability)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine flour, powdered sugar, cinnamon, nutmeg, and salt.
  3. Add the cubed butter and mix until crumbly.
  4. Stir in the egg yolk and water until the dough comes together.
  5. Press the dough into a tart pan and pierce the bottom with a fork.
  6. Bake for 15-20 minutes until lightly golden. Let it cool.
  7. For the mousse, melt the white chocolate in a heatproof bowl over simmering water or in the microwave.
  8. In another bowl, whip heavy cream until soft peaks form, then fold in the melted white chocolate and vanilla extract.
  9. If using, dissolve gelatin in the milk and stir into the mousse mixture.
  10. Pour mousse into the cooled tart crust and refrigerate for at least 2 hours until set.
  11. Before serving, top with fresh berries, white chocolate curls, and a dusting of powdered sugar.
