- 1 1/4 cups (150g) all-purpose flour
- 1/4 cup (30g) powdered sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup (113g) cold unsalted butter, cubed
- 1 large egg yolk
- 1–2 tablespoons cold water
- 8 ounces (225g) high-quality white chocolate, chopped
- 1 cup (240ml) heavy cream, chilled
- 1/4 cup (60ml) milk (whole or 2%)
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon unflavored gelatin (optional, for extra stability)
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine flour, powdered sugar, cinnamon, nutmeg, and salt.
- Add the cubed butter and mix until crumbly.
- Stir in the egg yolk and water until the dough comes together.
- Press the dough into a tart pan and pierce the bottom with a fork.
- Bake for 15-20 minutes until lightly golden. Let it cool.
- For the mousse, melt the white chocolate in a heatproof bowl over simmering water or in the microwave.
- In another bowl, whip heavy cream until soft peaks form, then fold in the melted white chocolate and vanilla extract.
- If using, dissolve gelatin in the milk and stir into the mousse mixture.
- Pour mousse into the cooled tart crust and refrigerate for at least 2 hours until set.
- Before serving, top with fresh berries, white chocolate curls, and a dusting of powdered sugar.
