Deliciously festive muffins infused with the flavors of eggnog, topped with a cookie crumble and optionally glazed for extra sweetness.

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 cup eggnog
  • 1/2 cup crushed holiday cookies (shortbread, sugar cookies, or gingerbread)
  • 2 tablespoons melted butter
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup powdered sugar
  • 12 tablespoons eggnog (for glaze)

Instructions

  1. Preheat oven to 350°F. Line a 12-cup muffin tin with paper liners or lightly grease each cup.
  2. In a medium mixing bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In a large bowl, beat softened butter with granulated and brown sugars until light and fluffy, about 2 to 3 minutes.
  4. Add eggs one at a time, blending well after each addition. Stir in vanilla extract until combined.
  5. Gradually add dry mixture to wet ingredients, alternating with eggnog, beginning and ending with dry ingredients. Mix until just incorporated; do not overmix.
  6. Divide batter evenly among prepared muffin cups, filling each about three-quarters full.
  7. For the topping, combine crushed holiday cookies, melted butter, granulated sugar, and cinnamon in a small bowl. Sprinkle mixture over each muffin before baking.
  8. Bake for 20 to 22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Let muffins cool in tin for 5 minutes, then transfer to a wire rack to cool completely.
  10. To make the glaze, whisk powdered sugar with 1 to 2 tablespoons eggnog until smooth. Drizzle over cooled muffins if desired.

  • For a richer flavor, add an extra splash of eggnog to the batter.
  • These muffins can be stored in an airtight container for up to 3 days.
  • Feel free to mix in some chocolate chips for added sweetness.
