Crisp cucumbers topped with creamy feta and olives make for a refreshing snack or appetizer.

Ingredients

  • 4 oz feta cheese
  • ¼ cup olives (any variety you love)
  • 2 tablespoons olive oil
  • Fresh herbs (like dill or parsley)
  • Salt and pepper to taste

Instructions

  1. Slice cucumbers into thick rounds, about half an inch thick.
  2. Crumble feta cheese into a bowl until well crumbled.
  3. Mix feta with chopped olives, olive oil, and herbs until blended.
  4. Top each cucumber slice with a heaping spoonful of the feta mixture.
  5. Season with salt and pepper to taste.
  6. Serve immediately or refrigerate until ready to serve.

Notes

Best served fresh but can be stored in the fridge for about a day. Avoid using overly ripe cucumbers to prevent sogginess.
