Ingredients

  • Fresh Salmon Fillets: 2 (about 6 oz each)
  • Mixed Salad Greens: 4 cups (arugula, spinach, romaine)
  • Cucumber: 1 medium, sliced
  • Cherry Tomatoes: 1 cup, halved
  • Red Onion: 1 small, thinly sliced
  • Lemon Juice: 2 tbsp, freshly squeezed

  • Salt and Pepper: to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place the salmon fillets skin-side down on the baking sheet. Drizzle with olive oil and season with salt and pepper.
  3. Bake in the preheated oven for 12-15 minutes until the salmon flakes easily with a fork.
  4. While the salmon is baking, slice the cucumber, halve the cherry tomatoes, and thinly slice the red onion.
  5. In a large bowl, combine mixed greens, cucumber slices, cherry tomatoes, and red onion.
  6. Flake the cooked salmon over the salad. Drizzle with lemon juice and olive oil before gently tossing everything together.
