Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon (optional)
  • 1/2 tsp salt
  • 1 1/4 cups buttermilk
  • 2 large eggs
  • 3 tbsp melted butter
  • 1 tsp vanilla extract
  • 2 ripe bananas, mashed (about 1 cup)
  • 1/2 cup chopped walnuts (plus more for topping)
  • Maple syrup, for serving
  • 1 banana, sliced (for topping)

Instructions

  1. Whisk the dry ingredients: In a large mixing bowl, combine flour, sugar, baking powder, baking soda, cinnamon, and salt. Whisk until well blended and free of lumps.
  2. Combine wet ingredients: In a separate bowl, whisk together buttermilk, eggs, melted butter, and vanilla extract. Integrate mashed bananas until smooth.
  3. Merge the mixtures: Pour wet ingredients into dry ingredients. Gently fold them together with a spatula, being careful not to overmix.
  4. Incorporate walnuts: Fold in chopped walnuts and let the batter rest for about 5 minutes for fluffier pancakes.
  5. Heat the griddle: Preheat a non-stick skillet or griddle over medium heat and lightly butter the surface.
  6. Cook the pancakes: Scoop about 1/4 cup of batter per pancake onto the hot surface. Cook for 2–3 minutes until bubbles form, then flip and cook for another 1–2 minutes until golden brown.
  7. Serve and enjoy: Stack pancakes high, garnish with banana slices, walnuts, and maple syrup.

Notes

Make-ahead option: Prepare the batter the night before and store in the refrigerator. For healthier alternatives, try using an air fryer or oven.
