Light, tender, and melt-in-your-mouth pancakes made with buttermilk for a slight tang.

  • 2 cups buttermilk
  • 2 large eggs

  • Powdered sugar for serving

Instructions

  1. Mix the dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. Combine the wet ingredients: In another bowl, combine the buttermilk, eggs, and melted butter. Mix until well-blended.
  3. Combine the wet and dry ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Prepare your griddle: Heat your skillet or griddle over medium heat and add a little butter.
  5. Cook the pancakes: Pour 1/4 cup of the batter for each pancake onto the skillet. Cook until bubbles form, then flip and cook until golden brown.
  6. Serve warm: Dust with powdered sugar and drizzle with warm syrup.
