1/2 cup cocoa powder
1/2 tsp baking soda
1/4 tsp baking powder
1/2 cup unsalted butter, room temp
1 cup sugar
2 large eggs
3/4 cup milk
2 tsp vanilla extract
1/2 cup unsalted butter (room temp, for frosting)
2 cups powdered sugar
Green food coloring
Candy eyes
Chocolate sprinkles
Black decorating gel
Instructions
Preheat oven to 350°F. Line a 12-cup muffin tin with cupcake liners.
Whisk flour, cocoa powder, baking soda, and baking powder in a bowl.
Mix milk with vanilla. In another bowl, beat butter until creamy, add sugar, then eggs until smooth.
Alternate adding dry mixture and milk mixture into butter mixture. Beat until fluffy and smooth.
Divide batter into liners (3/4 full). Bake 16 minutes or until toothpick comes out clean. Cool completely.
For frosting: beat butter and powdered sugar. Add milk if needed. Tint with green food coloring.
Pipe frosting onto cooled cupcakes. Dip tops in sprinkles for hair. Add candy eyes and draw stitches with black gel.
Notes
Make sure the butter is at room temperature for better mixing.
Using a toothpick to test for doneness helps prevent overbaking.
Feel free to adjust the amount of food coloring to achieve your desired shade of green.
