2 cups all-purpose flour
1/2 teaspoon salt
1 tablespoon sugar
1/2 cup unsalted butter, chilled and diced
6–8 tablespoons ice water
2 cups peaches or apples, peeled and diced
1/2 cup sugar (adjust based on fruit sweetness)
1 teaspoon cinnamon
1 tablespoon lemon juice
Oil for frying
Powdered sugar for dusting
Instructions
In a large bowl, combine the flour, salt, and sugar. Cut in the butter until the mixture resembles coarse crumbs.
Stir in ice water, a tablespoon at a time, until the dough comes together. Divide the dough into two balls, flatten into disks, wrap in plastic, and refrigerate for at least 30 minutes.
In another bowl, mix the diced peaches or apples with sugar, cinnamon, and lemon juice. Set aside.
On a floured surface, roll out one disk of dough to about 1/8 inch thick. Cut into circles (about 4-5 inches in diameter).
Place a spoonful of the fruit mixture in the center of each circle. Fold the dough over to form a half-moon shape and crimp the edges to seal.
In a deep skillet, heat oil over medium heat. Fry the pies for about 3-4 minutes on each side, or until golden brown. Drain on paper towels.
Dust with powdered sugar before serving.
Notes
Ensure the oil is hot enough before frying for the best texture.
Adjust the sugar in the fruit mixture based on the sweetness of the peaches or apples.
For extra flavor, add a splash of vanilla extract to the fruit filling.
These pies can be made ahead of time and reheated in an oven for crispness.
