Prepare the Yogurt Mixture: In a medium bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir well until the mixture is smooth and well-combined.
Add Extras: If you’re using mini chocolate chips or crushed nuts, fold them into the yogurt mixture gently.
Mold the Bites: Line a mini muffin tray with silicone molds or paper liners. Spoon the yogurt mixture into each mold, filling them about 3/4 of the way full.
Freeze: Place the filled muffin tray in the freezer and allow the yogurt to freeze for at least 4 hours, or until solid.
Create the Churro Coating: While the yogurt bites are freezing, prepare the cinnamon sugar coating by combining the sugar and ground cinnamon in a small bowl. Set aside.
Coat the Bites: Once the yogurt bites are completely frozen, remove them from the tray. Gently peel away the silicone molds or paper liners. Immediately roll each yogurt bite in the cinnamon sugar mixture until fully coated.
Serve or Store: You can serve them immediately as a refreshing snack or dessert. If you want to store them, place the coated yogurt bites in an airtight container in the freezer. Enjoy within 2-3 weeks.
