A delightful and healthy treat made with oats, raspberries, and yogurt that can be frozen for a refreshing snack.

  • 1/2 cup natural almond butter (or peanut butter)
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup fresh raspberries (or frozen, thawed)
  • 1/2 cup Greek yogurt (or dairy-free alternative)
  • 1/4 cup shredded coconut (optional)
  • 1/4 cup chopped nuts (e.g., almonds or walnuts, optional)

Instructions

  1. In a mixing bowl, combine the rolled oats, almond butter, honey (or maple syrup), vanilla extract, and salt. Stir until all ingredients are well mixed and form a thick dough-like consistency.
  2. Line a baking sheet with parchment paper. Take a tablespoon of the oat mixture and flatten it into a round disc about 1/4-inch thick. Repeat this process until you have approximately 12 discs, placing them evenly on the baking sheet.
  3. In another bowl, mix the Greek yogurt with the fresh raspberries gently to avoid crushing them too much, creating a chunky raspberry swirl. If desired, fold in the shredded coconut and chopped nuts for added texture.
  4. Take half of the oat discs and spoon a generous amount of the raspberry yogurt filling onto each. Place the remaining oat discs on top to form sandwiches. Gently press down to seal.
  5. Place the assembled sandwiches in the freezer for at least 2 hours, or until they are solid.
  6. Once frozen, take the sandwiches out of the freezer and let them sit for a couple of minutes at room temperature to soften slightly for easier biting. Enjoy your deliciously unique treat!
