Funfetti Ice Cream Bread is a delightful and easy-to-make dessert that combines the flavors of birthday cake and ice cream into a moist and delicious loaf.

Ingredients

  • 2 cups melted funfetti or birthday cake flavored ice cream
  • 1½ cups self-rising flour
  • ¼ cup rainbow sprinkles (optional, extra for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9×5 inch loaf pan with parchment paper.
  2. In a medium bowl, mix the melted ice cream and self-rising flour until just combined. Do not overmix.
  3. Gently fold in the rainbow sprinkles, reserving a few for topping.
  4. Pour the batter into the prepared loaf pan and smooth the top. Add extra sprinkles on top.
  5. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. Slice and serve as-is or with a smear of frosting, whipped cream, or even more ice cream!

Notes

  • This bread can be stored in an airtight container for a few days.
