2 cups melted funfetti or birthday cake flavored ice cream
1½ cups self-rising flour
¼ cup rainbow sprinkles (optional, extra for topping)
Instructions
Preheat oven to 350°F (175°C). Grease and line a 9×5 inch loaf pan with parchment paper.
In a medium bowl, mix the melted ice cream and self-rising flour until just combined. Do not overmix.
Gently fold in the rainbow sprinkles, reserving a few for topping.
Pour the batter into the prepared loaf pan and smooth the top. Add extra sprinkles on top.
Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Slice and serve as-is or with a smear of frosting, whipped cream, or even more ice cream!
Notes
This bread can be stored in an airtight container for a few days.
For extra flavor, try adding vanilla extract or almond extract.
