  • 2 Pork chops bone-in or boneless, about 1 inch thick
  • 3 cloves Garlic minced or finely chopped
  • 2 tbsp Unsalted butter
  • 1 tbsp Olive oil
  • Salt to taste
  • Pepper to taste
  • 1 tsp Smoked paprika optional
  • Fresh herbs parsley or thyme, for garnish – optional

Instructions

  1. Trim any excess fat and pat the chops dry with a paper towel to ensure a good sear.
  2. Season generously with salt, pepper, and smoked paprika on both sides.
  3. Use a cast iron skillet or heavy-bottomed pan for even heat distribution.
  4. Heat olive oil over medium-high heat until shimmering.
  5. Place the pork chops in the pan without overcrowding.
  6. Sear for 3-4 minutes on each side, or until a golden crust forms. Avoid flipping too often.
  7. Reduce heat to medium and add butter to the pan.
  8. Stir in minced garlic and baste the chops with the melted butter for 1-2 minutes.
  9. Use a meat thermometer to ensure the internal temperature reaches 145°F.
  10. Remove the chops from the pan and let them rest for 5 minutes before serving.
