- 1.5 pounds top sirloin steak, cut into 1-inch cubes
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon olive oil
- 3 tablespoons unsalted butter
- 4 garlic cloves, minced
- 2 tablespoons chopped fresh parsley
- 1/4 teaspoon crushed red pepper flakes (optional)
- Pat the steak cubes dry with paper towels to ensure they sear properly. Season with salt and pepper.
- Heat 1 tablespoon olive oil in a heavy skillet over medium-high heat. When hot, add half the steak cubes in a single layer without crowding.
- Sear the steak for 2 minutes per side until browned. Transfer to a plate. Repeat with the remaining steak.
- Reduce heat to medium. In the same skillet, add 3 tablespoons butter and the minced garlic. Cook for 1 minute, stirring to avoid burning.
- Return all the steak to the skillet. Toss to coat in the garlic butter and cook 1 more minute.
- Remove from heat. Garnish with parsley and red pepper flakes if using. Serve immediately.
