Garlic Mozzarella Chicken Bomb Skewers will amaze you with their juicy chicken and melted cheese, seasoned to perfection.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 8 oz fresh mozzarella cheese, cut into small cubes
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Wooden or metal skewers

Instructions

  1. In a large bowl, combine olive oil, minced garlic, Italian seasoning, smoked paprika, salt, and pepper.
  2. Add chicken cubes to the marinade, tossing to coat well. Cover and refrigerate for at least 30 minutes (up to 2 hours for more flavor).
  3. Preheat grill or grill pan to medium-high heat.
  4. To assemble each skewer, thread one piece of chicken, then a cube of mozzarella, followed by another piece of chicken, making sure to keep the cheese in the middle. Repeat until the skewer is full.
  5. Grill skewers for 4–5 minutes per side, or until chicken is cooked through and cheese is melted inside.
  6. Remove from grill and let rest for a few minutes. Garnish with fresh parsley before serving.

Notes

  • For more flavor, marinate the chicken for up to 2 hours.
  • Ensure the skewers are soaked in water if using wooden skewers to prevent burning.
