A classic dessert featuring a moist cake made with rich dates, drizzled with a luxurious toffee sauce.

Ingredients

  • 5 ounces dates, pitted and chopped
  • ½ teaspoon baking soda
  • ¼ cup boiling water
  • 3 tablespoons unsalted butter, room temperature
  • 6 tablespoons light brown sugar
  • 1 egg
  • ½ cup + 2 tablespoons all-purpose flour
  • ½ teaspoon baking powder
  • Toffee Sauce:
    • ½ cup unsalted butter
    • 1 cup packed brown sugar
    • 2 tablespoons milk
    • 2 tablespoons heavy cream
    • 2 tablespoons corn syrup
    • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the chopped dates with baking soda and boiling water in a medium bowl and let sit for 10 minutes.
  3. Cream together the unsalted butter and light brown sugar in a large bowl until light and fluffy.
  4. Mix in the egg until fully incorporated.
  5. Stir in the softened date mixture until well blended.
  6. Whisk together the flour and baking powder in another bowl.
  7. Fold the dry mixture into the wet ingredients until no dry flour remains.
  8. Pour the batter into a greased baking dish and bake for 30–35 minutes until a toothpick comes out clean.
  9. Melt the sauce ingredients in a saucepan over medium heat until smooth and bubbly.
  10. Serve warm, drizzled with toffee sauce, and enjoy!

Notes

For a richer flavor, you can add a squeeze of orange juice or zest, or even fold in some chopped nuts.
