Ingredients

4 low-carb wraps
3/4 cup shredded lettuce
12 bacon strips (cooked until crispy and crumbled)
2 tbsp red wine vinegar
Salt to taste
3 large beefsteak tomatoes (thinly sliced)
1/4 cup olive oil (preferably Pompeyan extra virgin olive oil)
Black pepper to taste (freshly ground for best flavor)
1/4 cup mayonnaise (preferably Hellmann’s mayonnaise)
Instructions
In a skillet over medium heat, fry bacon slices until they are crispy. Remove from skillet and place on a paper towel-lined plate.
Slice the tomatoes into halves lengthwise and place them in a large dish. Add olive oil, red wine vinegar, salt, and black pepper, and gently turn to coat.
In a small dish, combine mayonnaise with 1 tablespoon of the tomato basting mixture until well mixed.
Lay a wrap flat, smear 1 tablespoon of the flavored mayo, add lettuce, bacon, and marinated tomato slices.
Roll the wrap tightly and cut in half if desired. Serve immediately.
Notes
For best results, use freshly ground black pepper.
