A delicious Greek Tzatziki Chicken Salad Bowl that combines marinated grilled chicken, fresh vegetables, and a creamy tzatziki sauce.

Ingredients

  • 2 chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • 4 cups chopped romaine lettuce
  • 1/2 cup sliced cucumber
  • 1/3 cup kalamata olives
  • 1/4 cup thinly sliced red onion
  • 2 tablespoons chopped parsley
  • 1/2 cup tzatziki sauce

Instructions

  1. In a bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Marinate chicken for 30 minutes.
  2. Grill or sear the chicken until fully cooked, then rest and dice it.
  3. Combine Greek yogurt, grated cucumber (squeezed dry), minced garlic, lemon juice, chopped dill, olive oil, and salt for the tzatziki.
  4. Chop romaine, slice cucumbers and onions, and prepare olives.
  5. In a large bowl, layer romaine, chicken, cucumber, onion, and olives.
  6. Top with tzatziki sauce and garnish with parsley.

Notes

  • Marinate the chicken longer (up to overnight) for deeper flavor.
  • Make tzatziki a few hours ahead for the best taste.
