4 slices of thick sourdough or brioche bread
4 tablespoons cream cheese, softened
1 tablespoon honey (or to taste)
1 cup mixed fresh fruits (e.g., strawberries, peaches, kiwi, and blueberries) diced
1/4 cup shredded mozzarella cheese
1 teaspoon cinnamon
2 tablespoons butter, softened (for grilling)
Instructions
In a small bowl, combine the softened cream cheese with honey. Mix until smooth and set aside.
Take two slices of bread and spread a generous layer of the honey cream cheese mix on each slice. Sprinkle some cinnamon over the cream cheese for added flavor.
On one slice, arrange a mix of the diced fresh fruits evenly. Add some shredded mozzarella cheese on top of the fruit mixture.
Place the other slice of bread on top to create a sandwich. Repeat the process for the second sandwich.
Heat a grill pan or skillet over medium heat. Spread softened butter on the outer sides of the sandwiches. Once the pan is hot, place the sandwiches butter-side down, pressing gently. Grill each side for about 3-4 minutes or until golden brown and the cheese has melted.
Once grilled to perfection, remove from the pan. Let them cool for a minute, then slice diagonally. Drizzle with additional honey, dust with powdered sugar, and sprinkle with fresh mint before serving.
