1½ lbs flank or skirt steak
3 tbsp olive oil
Juice of 1 lime
2 cloves garlic, minced
1 tsp chili powder
1 tsp cumin
½ tsp smoked paprika
Salt and black pepper to taste
2 ripe avocados, diced
½ small red onion, finely chopped
1 jalapeño, seeded and minced
¼ cup fresh cilantro, chopped
Juice of 1 lime
Salt to taste
8 small corn or flour tortillas
½ cup crumbled queso fresco or cotija cheese
Lime wedges and extra cilantro, for garnish
Instructions
Combine all steak marinade ingredients in a bowl or zip-top bag. Add steak and marinate for at least 30 minutes (up to 4 hours for deeper flavor).
While steak marinates, make the avocado salsa: combine all salsa ingredients in a bowl and gently mix. Refrigerate until ready to serve.
Preheat grill or grill pan to medium-high heat. Grill steak for 4–5 minutes per side or until desired doneness. Let rest for 5 minutes, then slice thinly against the grain.
Warm tortillas on the grill or in a skillet until slightly charred and pliable.
Assemble tacos by layering grilled steak, avocado salsa, crumbled cheese, and fresh cilantro. Serve with lime wedges on the side.
Notes
For best flavor, marinate the steak for the full 4 hours.
Adjust the spiciness of the salsa by adding more or less jalapeño.
