1 pound ground beef
1 onion, chopped
2 cloves garlic, minced
1 can (15 oz) diced tomatoes
1 can (8 oz) tomato sauce
1 cup uncooked elbow macaroni
2 cups beef broth
1 teaspoon Italian seasoning
Salt and pepper to taste
1 cup shredded cheddar cheese
1/2 cup breadcrumbs
2 tablespoons olive oil
Instructions
Preheat oven to 350°F (175°C).
In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for 2-3 minutes until the onion is translucent.
Add the ground beef to the skillet, cooking until browned. Drain excess fat if necessary.
Stir in the diced tomatoes, tomato sauce, uncooked macaroni, beef broth, Italian seasoning, salt, and pepper. Bring the mixture to a boil, then reduce heat and let simmer for 10 minutes, stirring occasionally.
Transfer the mixture to a greased 9×13 inch baking dish. Sprinkle shredded cheddar cheese evenly over the top, followed by the breadcrumbs.
Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and the breadcrumbs are golden brown.
Notes
Feel free to add vegetables like bell peppers or zucchini for extra nutrition.
This dish can be made ahead of time and stored in the refrigerator before baking.
