A comforting and nutritious egg salad bowl featuring hard-boiled eggs, Greek yogurt, and fresh vegetables.

Ingredients

  • 4 hard-boiled eggs
  • 2 tablespoons Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1/4 cup diced celery
  • 1/4 cup diced red onion
  • Salt and pepper to taste
  • Mixed greens or lettuce for serving
  • Cherry tomatoes for garnish (optional)

Instructions

  1. Peel and chop the hard-boiled eggs, setting them aside.
  2. Mix the Greek yogurt and Dijon mustard in a mixing bowl.
  3. Add the diced celery and red onion, folding them in gently.
  4. Combine the chopped eggs with the mixture and stir until it’s well blended.
  5. Season with salt and pepper to taste.
  6. Plate the salad over mixed greens or crispy lettuce.
  7. Garnish with halved cherry tomatoes if desired.
