A comforting blend of shredded chicken and creamy white beans infused with Cajun spices, perfect for chilly evenings.

Ingredients

  • 1 lb shredded chicken
  • 1 can white beans (cannellini or great northern)
  • 1 can red beans
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup cream cheese
  • 2 cups chicken broth
  • 2 tbsp Cajun seasoning
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Sauté the onion and garlic in a large pot over medium heat until soft and fragrant.
  2. Add the shredded chicken, both cans of beans (drained and rinsed), chicken broth, and Cajun seasoning; stir to combine.
  3. Bring the mixture to a simmer and allow to cook gently for 15-20 minutes.
  4. Stir in the cream cheese until melted and well incorporated.
  5. Season to taste with salt and pepper.
  6. Garnish with chopped green onions and serve hot.

Notes
