High Protein Chicken Zucchini Bake

A nourishing and delicious bake featuring tender chicken and zucchini, topped with a cheesy crust.

  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • Freshly ground black pepper, to taste
  • 2 medium zucchini, thinly sliced
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/2 cup plain Greek yogurt
  • 1 cup shredded low-fat mozzarella cheese, divided
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon olive oil
  • Fresh parsley or basil for garnish, optional

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×9-inch baking dish with olive oil.
  2. Combine oregano, smoked paprika, garlic powder, salt, and black pepper in a medium bowl, then toss the chicken pieces in the spice mixture.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat and sear the chicken for 3-4 minutes on each side until golden brown.
  4. Remove the chicken from the skillet and set it aside on a plate.
  5. Add the chopped onion to the skillet and sauté for 3 minutes, then stir in the minced garlic and cook for another 30 seconds.
  6. Whisk the eggs and Greek yogurt together in a separate bowl until smooth, then season lightly with salt and pepper.
  7. Return the seared chicken to the skillet, combine with the onion and garlic mixture, and remove from heat.
  8. Layer half of the sliced zucchini in the bottom of the baking dish, then spread half of the chicken-onion mixture over it.
  9. Pour half of the yogurt-egg mixture evenly over the chicken.
  10. Sprinkle half of the mozzarella and half of the Parmesan cheese on top.
  11. Repeat the layering with the remaining zucchini, chicken mixture, yogurt-egg mix, finishing with the last bits of cheeses.
  12. Cover the dish loosely with foil and bake for 20 minutes, then remove the foil and bake for an additional 10-15 minutes until the cheese is melted and golden.
  13. Rest for 5 minutes before slicing and garnish with fresh parsley or basil, if desired.

Notes

You can prepare layers a day in advance for convenience; reheat in the oven prior to serving.
