A delightful casserole made with sweet potatoes and apples, coated in a honey glaze, perfect for a cozy meal.

Ingredients

  • 3 medium sweet potatoes
  • 2 apples
  • 1/3 cup honey
  • 1/4 cup butter
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla
  • Chopped toasted pecans (optional)

Instructions

  1. Preheat oven to 375 F.
  2. Place un-pierced potatoes on a baking sheet and bake for 40-45 minutes until soft. Let cool.
  3. Peel, slice & core your apples and set aside, drizzling with lemon juice to prevent browning.
  4. Remove peel from sweet potatoes and cut into 1/2-inch thick slices. Arrange in an 8×8 or 9×9 baking dish, alternating with apple slices.
  5. Melt together honey, butter, cinnamon, and vanilla in a small saucepan. Remove from heat.
  6. Chop pecans and toast on a parchment-lined baking sheet under broil until fragrant, about 5 minutes.
  7. Pour honey mixture over the layered sweet potatoes and apples. Sprinkle with chopped pecans if desired.
  8. Bake at 350 F for 15-20 minutes until heated throughout.

Notes

  • Adjust the amount of honey according to your sweetness preference.
  • This dish makes a great side or dessert.
