Delicious Italian Almond Ricotta Cookies that are soft, flavorful, and topped with a sweet almond glaze.

  • 1 cup whole milk ricotta cheese
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon almond extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon almond extract

Instructions

  1. In a large bowl, mix ricotta cheese, granulated sugar, egg, and almond extract until smooth.
  2. Add flour, baking powder, and salt; stir until fully combined into a soft dough.
  3. Scoop heaping tablespoons onto a parchment-lined baking sheet.
  4. Bake at 350°F for 12–14 minutes, until puffed but not browned.
  5. In a separate bowl, whisk together powdered sugar, milk, and almond extract to make glaze.
  6. Once cookies are cool, drizzle or dip each in the glaze and allow to set for 20 minutes.

  • Ensure the ricotta cheese is well-drained for the best texture.
