Delicious Italian bruschetta topped with fresh tomatoes and creamy mozzarella, perfect as an appetizer or light meal.

  • 1 French baguette, sliced into 1/2 inch thick pieces
  • 2 large ripe tomatoes, diced
  • 1 cup fresh mozzarella, diced
  • 1/4 cup fresh basil leaves, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons extra-virgin olive oil, plus more for brushing
  • 1 tablespoon balsamic vinegar
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. Lay the sliced baguette pieces in a single layer on the sheet.
  4. Brush each slice of bread lightly with olive oil.
  5. Place the baking sheet in the oven and toast the bread for about 5-7 minutes.
  6. Mix the topping: In a large bowl, combine the diced tomatoes, mozzarella, and basil.
  7. Add garlic, olive oil, and balsamic vinegar to the bowl.
  8. Season the mixture with salt and pepper to taste.
  9. Let the mixture sit for about 10 minutes at room temperature.
  10. Spoon a generous amount of the tomato-mozzarella topping onto each toasted baguette slice.
  11. Drizzle a little more olive oil on top, if desired.
  12. Serve immediately and enjoy the burst of Italian flavors.

Notes

You can prepare the tomato-mozzarella topping a few hours in advance and keep it refrigerated. Consider using an air fryer for a quicker option.
