A delightful Italian cheese log made with cream cheese, mozzarella, and sun-dried tomatoes, perfect for serving with crackers or bread.

  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/2 cup walnuts or pecans, chopped (for coating)

Instructions

  1. In a mixing bowl, blend together the softened cream cheese, shredded mozzarella, and grated Parmesan.
  2. Stir in the chopped parsley, sun-dried tomatoes, minced garlic, Italian seasoning, red pepper flakes, salt, and pepper. Mix thoroughly.
  3. Place the cheese mixture on a piece of plastic wrap, forming it into a log shape. Wrap it tightly. Refrigerate for at least 2 hours until firm.
  4. After chilling, unwrap the cheese log and roll it in the chopped walnuts or pecans to coat evenly.
  5. Slice the cheese log into rounds and serve with crackers, bread, or fresh vegetables.
