- 1 yellow or white onion (roughly chopped)
- 2 carrots (roughly chopped)
- 2 celery sticks (roughly chopped)
- 6 cups chicken or vegetable broth
- 1 Parmesan rind
- 1 cup pastina pasta (or other small pasta)
- 1/2 cup grated Parmesan cheese
- Salt and pepper (to taste)
- Fresh parsley (optional, for garnish)
- Chop all vegetables roughly.
- In a large pot, combine chopped vegetables, broth, and Parmesan rind; bring to a boil.
- Reduce heat, cover, and simmer for 15–18 minutes until veggies are tender.
- Strain cooked vegetables; blend with some broth until smooth.
- Return puree to the pot, add pastina, and simmer for another 7–9 minutes until the pasta is cooked.
- Season with grated Parmesan cheese, salt, and pepper to taste.
- Serve hot, garnished with parsley if desired.
Notes
- Feel free to experiment with different vegetables based on seasonal availability.
- This soup can be made vegan by using vegetable broth and omitting Parmesan cheese.
