1 pound Italian sausage (mild or spicy, your choice)
2 cups bell peppers, sliced (red, yellow, and green)
1 large onion, sliced
2 cups zucchini, sliced
1 can (14.5 oz) diced tomatoes, undrained
2 tablespoons olive oil
1 teaspoon Italian seasoning
Salt and pepper to taste
1 cup shredded mozzarella cheese
Fresh basil for garnish
Instructions
Preheat oven to 400°F (200°C).
In a large skillet over medium heat, cook the Italian sausage until browned and cooked through, breaking it apart with a spoon as it cooks. Drain excess fat if necessary.
In a large mixing bowl, combine the sliced bell peppers, onion, zucchini, diced tomatoes (with their juice), olive oil, Italian seasoning, salt, and pepper. Toss to coat the vegetables evenly.
Add the cooked sausage to the vegetable mixture and stir to combine.
Transfer the mixture to a large baking dish, spreading it out evenly.
Bake in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly caramelized.
Remove from the oven and sprinkle the shredded mozzarella cheese on top. Return to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
Garnish with fresh basil before serving.

Adjust the spice level by choosing mild or spicy sausage.
