1 pound Italian turkey sausage
2 tablespoons olive oil
1 onion, sliced
2 bell peppers (red and yellow), sliced
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Crusty bread or hoagie rolls (optional, for serving)
Instructions
In a large skillet, heat olive oil over medium heat. Add the Italian turkey sausage and cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes.
Once the sausage is cooked through, add the sliced onion and bell peppers to the skillet. Sauté for 5-7 minutes, or until the vegetables are tender and slightly caramelized.
Stir in the minced garlic, dried oregano, and dried basil. Cook for an additional 1-2 minutes, until the garlic is fragrant. Season with salt and pepper to taste.
Remove from heat and garnish with fresh parsley. Serve hot, either on its own or in crusty bread or hoagie rolls for a delicious sandwich.
Notes
For added heat, consider adding red pepper flakes.
