1 pound ground turkey
2 medium zucchinis, diced
1 bell pepper, chopped
1 onion, chopped
3 cloves garlic, minced
1 can (14.5 oz) diced tomatoes, undrained
1 tablespoon olive oil
1 teaspoon Italian seasoning
Salt and pepper to taste
1/4 cup grated Parmesan cheese
Fresh basil for garnish
Instructions
In a large skillet, warm the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for 2-3 minutes until the onion becomes translucent.
Introduce the ground turkey to the skillet, breaking it apart with a spatula. Cook for approximately 5-7 minutes until the turkey is browned and thoroughly cooked.
Incorporate the diced zucchini and chopped bell pepper into the skillet, continuing to cook for an additional 5 minutes until the vegetables become tender.
Add the diced tomatoes, including their juices, and sprinkle over the Italian seasoning, salt, and pepper. Stir thoroughly to combine, then allow the mixture to simmer for 10 minutes to let the flavors meld.
Once cooked, remove the skillet from heat and sprinkle the dish with grated Parmesan cheese. Garnish with fresh basil before serving.
