1 cup basmati rice
2 cups water
1 tablespoon ghee or oil
1 teaspoon cumin seeds
1 bay leaf
2–3 green cardamom pods
1–2 cloves
1 small onion, thinly sliced
Salt to taste
Fresh cilantro for garnish
Instructions
Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 20-30 minutes, then drain.
In a large pot, heat ghee or oil over medium heat. Add cumin seeds, bay leaf, cardamom pods, and cloves. Sauté for about 30 seconds until fragrant.
Add the sliced onion to the pot and cook until golden brown, about 5-7 minutes.
Stir in the drained rice and sauté for another 2-3 minutes, ensuring the rice is well-coated with the spices.
Pour in the water and add salt to taste. Bring to a boil, then reduce the heat to low and cover the pot.
Cook for 15-20 minutes, or until the rice is tender and the water has been absorbed. Remove from heat and let it sit covered for an additional 5 minutes.
Fluff the rice with a fork and garnish with fresh cilantro before serving.
