1/3 cup packed brown sugar
1 cup chopped yellow onion
1/4 teaspoon fine salt
1 teaspoon finely chopped garlic
1/2 pound bacon, chopped into small chunks
1/4 cup apple cider vinegar
4 burger buns
1 pound lean ground beef
4 slices of gouda or classic American cheese
1/2 pound bacon, whole pieces
Instructions
Slice up the bacon into small chunks (about 1 inch each) and set aside the whole pieces for later.
Cook the bacon bits and chopped onions in a pan over medium heat until the bacon is crispy and the onions are tender.
Discard all but 2 tablespoons of the grease from the pan, then stir in garlic and cook for a minute.
Add in the brown sugar, vinegar, and salt, cooking the mix until it thickens to a jam consistency. Cool it off in a jar and set it aside.
Lay the leftover bacon slices flat on a foil-covered baking sheet and place in a cold oven set to 400°F. Let the bacon crispen up as the oven heats.
After cooking, move the bacon to a plate lined with paper towels to drain.
Shape the beef into 4 burger patties, sprinkle with salt and pepper, and cook to your preferred doneness.
Place a cheese slice over each patty right before they are done to melt.
Assemble the burger by placing a patty with melted cheese on the bottom bun, adding a scoop of sweet bacon jam, a couple of crispy bacon pieces, and finishing with the top bun. Serve warm.
Notes
Ensure the bacon is as crispy as possible for the best texture.
You can adjust the sweetness of the bacon jam by adding more or less brown sugar.
This recipe can be doubled for a larger gathering.
