Ingredients

Scale
  • 1 lb ground beef
  • 1 cup finely chopped green onions (scallions)
  • 1/2 cup finely chopped napa cabbage (optional)
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2430 round dumpling wrappers (store-bought)
  • 1/3 cup water (for sealing)
  • 2 tbsp neutral oil (like avocado or vegetable)
  • 1/2 cup water (for steaming in the pan)
  • 3 tbsp soy sauce, 1 tbsp rice vinegar, 1 tsp sesame oil, 1 tsp chili crisp or sriracha (optional, for dipping sauce)
  • 1 tsp sesame seeds + sliced scallions (optional)

Instructions

  1. Combine the ground beef, green onions, napa cabbage (if using), minced garlic, grated ginger, soy sauce, sesame oil, rice vinegar, sugar, salt, and black pepper in a large mixing bowl. Use your hands or a spoon to mix until well combined.
  2. Place a dumpling wrapper flat on your palm or a clean surface. Take 1 heaping teaspoon of filling and put it in the center of the wrapper.
  3. Wet the edge of the wrapper with a finger dipped in water, then fold the wrapper in half over the filling to create a half-moon shape. Pinch the edges together to seal.
  4. Heat 1 tablespoon of neutral oil in your nonstick skillet over medium-high heat. Place the dumplings flat-side down in a single layer without overcrowding.
  5. Cook for 2–3 minutes until the bottoms are a deep golden brown and crispy.
  6. Carefully pour in 1/2 cup water around the dumplings, then cover with a lid immediately. Steam for about 5–6 minutes or until the wrappers become translucent and the filling is cooked through.
  7. Remove the lid and allow the dumplings to cook for another 1–2 minutes without water to re-crisp the bottoms.
  8. Plate the dumplings elegantly. Drizzle with dipping sauce, and garnish with sesame seeds and sliced scallions if desired.

Notes

Make the filling a day in advance for easier preparation. These dumplings can also be frozen and cooked directly from frozen.
