2 medium green cabbages
2 tbsp olive oil or butter
Salt & pepper, to taste
12 oz smoked sausage (andouille or kielbasa), sliced
½ lb shrimp, peeled & deveined
½ cup onion, chopped
½ cup bell peppers (red & green), diced
2 cloves garlic, minced
2 tbsp olive oil or bacon fat
1 tsp Cajun seasoning
½ tsp paprika
½ tsp garlic powder
¼ tsp cayenne (optional, for spice)
Instructions
Bring a large pot of water to a boil. Core the cabbages and carefully separate the leaves. Blanch the leaves in boiling water for 2-3 minutes until pliable. Drain and set aside.
In a large skillet, heat olive oil or bacon fat over medium heat. Add the sliced smoked sausage and cook until browned, about 4-5 minutes.
Add the chopped onion, diced bell peppers, and minced garlic to the skillet. Sauté for 3-4 minutes until vegetables soften.
Stir in the shrimp and cook until they turn pink and are cooked through, about 3-4 minutes.
Sprinkle Cajun seasoning, paprika, garlic powder, and cayenne over the mixture. Stir well to combine and cook for another minute. Remove from heat.
Preheat oven to 375°F (190°C). Lightly grease a baking dish with olive oil or butter.
Lay out cabbage leaves and spoon the shrimp and sausage filling onto the center of each leaf. Roll the leaves tightly and tuck in the sides to form neat rolls.
Place the stuffed cabbage rolls seam side down in the baking dish. Drizzle with olive oil or dot with butter, and season with salt and pepper.
Cover the dish with foil and bake for 25-30 minutes, until cabbage is tender and flavors meld.

Use fresh Cajun seasoning for a vibrant, authentic flavor that elevates the filling.
Blanch cabbage leaves just until pliable to avoid tearing when rolling.
