2 cups shredded Swiss cheese
8 ounces sliced corned beef
1 cup drained sauerkraut
1/4 cup mayonnaise
1 teaspoon Worcestershire sauce
1 1/2 tablespoons sugar-free ketchup
2 teaspoons Swerve confectioners sugar substitute
1 tablespoon prepared horseradish sauce
1 pinch paprika
Instructions
Set oven temperature to 400°F and allow to fully preheat.
Portion shredded Swiss cheese into 8 equal circles on a parchment-lined baking sheet. Use two sheets if necessary to avoid overcrowding.
Place baking sheet in oven and bake for 6 to 8 minutes, until edges turn golden brown and cheese becomes crisp.
While cheese bakes, combine mayonnaise, Worcestershire sauce, sugar-free ketchup, Swerve, prepared horseradish sauce, and paprika in a bowl, stirring until fully emulsified.
Remove cheese circles from oven and let cool on sheet for 1 minute to set.
Place several slices of corned beef and a portion of sauerkraut onto each cheese circle, topping with a drizzle of prepared dressing.
Quickly fold cheese circles over the filling to create roll-ups before they become too firm.
Let roll-ups rest briefly to allow exterior to crisp, then serve immediately.
