A delicious low-carb treat, these Keto Crispy Reuben Roll-Ups combine crispy Swiss cheese with corned beef and sauerkraut, all drizzled with a tangy dressing.

  • 2 cups shredded Swiss cheese
  • 8 ounces sliced corned beef
  • 1 cup drained sauerkraut
  • 1/4 cup mayonnaise
  • 1 teaspoon Worcestershire sauce
  • 1 1/2 tablespoons sugar-free ketchup
  • 2 teaspoons Swerve confectioners sugar substitute
  • 1 tablespoon prepared horseradish sauce
  • 1 pinch paprika

Instructions

  1. Set oven temperature to 400°F and allow to fully preheat.
  2. Portion shredded Swiss cheese into 8 equal circles on a parchment-lined baking sheet. Use two sheets if necessary to avoid overcrowding.
  3. Place baking sheet in oven and bake for 6 to 8 minutes, until edges turn golden brown and cheese becomes crisp.
  4. While cheese bakes, combine mayonnaise, Worcestershire sauce, sugar-free ketchup, Swerve, prepared horseradish sauce, and paprika in a bowl, stirring until fully emulsified.
  5. Remove cheese circles from oven and let cool on sheet for 1 minute to set.
  6. Place several slices of corned beef and a portion of sauerkraut onto each cheese circle, topping with a drizzle of prepared dressing.
  7. Quickly fold cheese circles over the filling to create roll-ups before they become too firm.
  8. Let roll-ups rest briefly to allow exterior to crisp, then serve immediately.
