Keto Crispy Reuben Roll-Ups are a delicious twist on the classic Reuben sandwich, featuring Swiss cheese, corned beef, sauerkraut, and Dijon mustard rolled into a crispy treat.

  • 12 slices Swiss cheese
  • 12 slices corned beef
  • 0.75 cup sauerkraut, drained and patted dry
  • 2 tablespoons Dijon mustard
  • 1 tablespoon chopped parsley (optional garnish)

Instructions

  1. Preheat a nonstick skillet over medium heat. Drain and pat dry the sauerkraut to remove excess moisture.
  2. Place slices of Swiss cheese into the hot skillet, working in batches of 2–3 at a time depending on your skillet size.
  3. Cook the cheese for about 2 minutes until bubbly and edges begin to brown slightly.
  4. Top each cheese slice with 1 slice of corned beef, followed by about 1 tablespoon of sauerkraut and a drizzle of Dijon mustard.
  5. Use a spatula to gently roll the cheese slice into a log while still pliable. Roll tightly until sealed.
  6. Transfer to a plate and repeat with the remaining ingredients.
  7. Garnish with chopped parsley and serve warm with extra mustard or Russian dressing for dipping.

Notes

  • Ensure the sauerkraut is well-drained to avoid soggy roll-ups.
  • These roll-ups can be served with a side of pickles or salad.
