A delightful twist on the classic Reuben sandwich, these Keto Crispy Reuben Roll-Ups feature crispy cheese shells filled with savory corned beef, tangy sauerkraut, and a drizzle of mustard, all in a low-carb package.

Ingredients

  • 1 cup shredded cheese (Swiss or cheddar)
  • 6 oz corned beef, sliced
  • 1/2 cup sauerkraut, drained
  • 2 tbsp mustard
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Line your baking sheet with parchment paper.
  3. Mix your shredded cheese with salt and pepper in a bowl.
  4. Spread the cheese mixture into rectangle shapes on the baking sheet.
