A creamy and satisfying casserole filled with tender chicken, earthy mushrooms, and a blend of cheeses, perfect for comfort food lovers.

  • 2 cups cooked chicken (shredded or diced)
  • 8 ounces mushrooms (sliced, button or cremini)
  • 4 cloves garlic (minced)
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper (to taste)
  • 2 tablespoons fresh parsley (chopped, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pour the olive oil into a large skillet over medium heat. Once hot, add the sliced mushrooms and sauté until golden brown, about 5-7 minutes.
  3. Add the minced garlic to the skillet, cooking for a minute or two until fragrant.
  4. Combine the cooked chicken, sautéed mushrooms and garlic, heavy cream, thyme, oregano, salt, and pepper in a large mixing bowl. Gently mix.
  5. Transfer the mixture into a greased 9×13-inch casserole dish.
  6. Sprinkle the mozzarella and Parmesan cheese generously over the top.
  7. Bake in the preheated oven for 25-30 minutes, until the cheese is bubbly and golden.
  8. Garnish with freshly chopped parsley before serving.

Notes

This casserole can be prepared a day in advance and stored in the fridge. Reheat it in the oven for the best results.
