Delicious and satisfying bites that capture the essence of pizza while being low in carbs, perfect for a keto diet.

Ingredients

  • 24 slices pepperoni
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1/2 teaspoon Italian seasoning (optional)
  • 2 tablespoons low-sugar pizza sauce (optional)
  • Cooking spray or olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Grease your mini muffin pan with cooking spray or olive oil.
  3. Lay one slice of pepperoni into each muffin cup.
  4. Combine the shredded mozzarella, grated parmesan, and Italian seasoning in a mixing bowl.
  5. Add a spoonful of the cheese mixture atop the pepperoni in each cup.
  6. Plop a small dot of low-sugar pizza sauce on top if desired.
  7. Bake for 10 to 12 minutes until the cheese is golden and bubbly.
  8. Cool for about 5 minutes before removing from the pan.
