Delightful Lavender Lemon Cream Bars combining tart lemon with subtle floral notes, perfect for gatherings or a relaxing snack.

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 cup unsalted butter, softened
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup heavy cream
  • 1 tablespoon dried lavender or fresh lavender sprigs for garnish
  • A pinch of salt

Instructions

  1. Preheat the oven: Set it to 350°F (175°C) and grease your 8×8-inch baking dish.
  2. Make the crust: In a bowl, mix together the flour, powdered sugar, and softened butter until crumbly. Press this mixture into the bottom of the prepared baking dish to form the crust.
  3. Prepare the filling: In another bowl, whisk together the eggs, granulated sugar, lemon juice, lemon zest, heavy cream, and salt until smooth.
  4. Combine: Pour this luscious lemon mixture over the crust in the baking dish.
  5. Bake: Place it in the oven for about 20-25 minutes or until the edges are lightly golden and the center is set.
  6. Cool & Chill: Let them cool at room temperature. Then, refrigerate them for at least 2 hours before cutting into bars.
  7. Serve: When ready, serve chilled, garnished with fresh lavender if you’re feeling fancy.

Notes

Cooling the bars is crucial! They won’t cut nicely if they aren’t set. Use fresh lemon juice for the best flavor.
